I am not so sure it is always "supply and demand" for nonperishable consumables. Demand seems to cause price increases, but they just never ever go back down to earth.

I've seen this movie too many times. Ammo never goes down in price for long, if ever. I took advantage during the 2018-2019 price drop every month because I finally could stock up a little (and not starve). It's hard to stock up, but it is even harder to pay "today's prices" whatever day it is.
Honestly, the odds are much better that most of us will need a defibrillator at home before we'd need body armor. Consider your family medical history, age, and other demographics when assessing risk. ;)
I keep my revolvers because... you never know when mag bans or ammo limits may come to your state. If they limit everyone to 100 rds per year or something, I want to keep my .357 Magnum. If they limit mags to 10 or less rounds, I will be glad I kept a revolver.

Unpopular opinion: With the current cost of shotgun ammo, I wouldn't buy another shotgun, myself. Consider how much ammo costs over time vs the cost of the firearm. Why not use a 9, 40, or 45 caliber carbine and practice more with cheaper ammo?
The DAK P220 was on sale a lot in the past few years. PD turn-in were always DAK and cheap, but I don't want one. They didn't sell well until the latest run on guns. I assume that that the anecdotes from LEOs are all regarding DAK, anyway.

Single stack 9mm are hard to find these days unless they are small cc pistols. I have a little SIG P290 single stack 9mm that is amazing, but it isn't 5" barrel. Hell, I even carry a double stack 45 w/ 5" bbl sometimes. Why not? :)
I saw a lot of 7.62x39 used by Territorial Defense units (essentially these are local militias). Looked like WASRs. I think they are using whatever they can find right now. I saw some carrying 12GA shotguns, too.
Every day I see these AK prices, I am happy that I went a little-AK happy during the $399-499 days. I tried to get one cheap AK from each country because AR prices were so high back then. Hungarian, Russian, Romanian, Yugo, etc. Plenty of mags and Golden Tiger ammo when the price of ammo...
Price of AKs is still insane but ARs are returning to 2016 pre-election panic prices.
I don't see the prices settling much lower for anything, but I sure hope ammo prices drop. Mini Mag 22LR is still higher priced than 9mm prices two years ago. The nightmare scenario of highly taxed ammo...
I cannot imagine they won't just NFA them or outright ban them. Look at bumpfire stocks and tell me they will act any differently. I expected this to happen years ago with pistol braces.
