    Woke up, after three cups of coffee, and found I craved an omelet.

    Did something a little different this year Cornish Hens, they turned out pretty good. We had limited attendance this year so did not cook that much. And it was so funny cause even Sheba the cat got her a bird..

    Have not done Cornish hens since the boys moved on after they completed college. Did you bake or grill them?

    Cool. I fixed a turkey cure dinner after returning from the holiday. Gumbo with andouille sausage, shrimp, and scallops. Used poblano peppers instead of green pepper and thickened it up a bit. Drive all that turkey sleepiness right out of you!

    I spared you the breakfast I made this morning, for the wife on her birthday. Made the wife an omelet and me a scramble. Sauteed onions,two types of mushrooms, and minced poblanos, with Jimmy Deans sausage crumbles. Filled the omelette with that and a four cheese blend of sharp cheddar's. Sourdough English muffin and a smoked cheddar sausage on the side, with strawberry jam on one half of the muffin.

    I REALLY like my grub! :wave:

    It could be worse Sean. My wife LOVES Another Broken Egg....eat there most breakfast out, and not as well priced as Cracker Barrel!

    For the holiday's, I wanted to share a recipe with ya'll, good stuff and good eating. If you decide to try it enjoy. Momma say's you will like it!!




    Sweet Potato Crunch

    Ingredients (mix all together with mixer)
    1- 29oz can & 1-15oz can of Bruce’s Yams
    3 eggs beaten
    1 teaspoon cinnamon
    ½ teaspoon all spice
    ½ teaspoon pumpkin pie spice
    1 5oz can evaporated milk
    1 teaspoon vanilla
    1 cup sugar

    Topping (do not mix together)
    1 box butter recipe yellow cake mix
    ¾ cup melted butter
    1 cup chopped pecans or walnuts

    Pour ingredients in a 9x13 baking dish. Sprinkle with yellow dry cake mix. Drizzle melted
    butter over cake mix. Scatter chopped nuts over melted butter.
    Bake at 350 degrees for 45 minutes or when slightly brown.

    Good start on a cool rainy day. Scramble with ham and onion. Potatoes with onion, and of course buttermilk biscuits so the wife can smother one in strawberry jam!

    Nope, my 84 YO dad. It's "our time", our once a week meetup. I'm not complaining about eating with him, I try to get every minute with him while I can. He just won't budge on the location. I try to get him to go other places but it ain't happening.

    Yeah. My wife says I'm set in my ways and should try new experiences. I agree totally but she says we can't afford for me to take on a younger girlfriend.
