    Home raised and cured bacon. Took 14 months from buying young pigs and breeding, to butchering our first litter.

    Threw a few chunks in with some pinto beans and leftover boston butt, beef broth, garlic, onion, chili powder, bay leaf from the yard, and a dash of tonys. Im gonna have to run up and down the driveway a few times after a bowl of that!

    I spent a good part of the day smoking a rack of spare ribs and some homemade meatballs. This will get use through for a few days. We'll warm up the meat of choice in the oven and make a couple of fresh sides each night. Tonight's sides were baked beans and my wife was craving rice and gravy so I made her some basmati rice and onion gravy.

    Last nights dinner at El Paso on Mobile Hwy. Ate there just after they opened, and it was ok but wife liked it better than I did. Seems they have up their game, both in décor and food as yesterday it was delicious!

    Tonight, a Jennie-O turkey breast, gravy, chicken cornbread dressing, corn on the cob, asparagus, and black-eyed peas from dried peas flavored with ham and onion.

    Tried a new pasta with veggies. Usual mixed store sold sauces, and meatballs. The new pasta was great, minimum cooking time perfect al dente.

    I went with porkchops, rice and gravy. Was so hungry i forgot the asparagus. Followed by bread pudding.
